I love a Bloody Mary, full of spices and extra things to chomp on so I wanted to create a salad that is reminiscent of it. I was tossing ideas around in my head for a while and then when I ran across the mini pepperoni at the supermarket it all came together. I hope you enjoy this recipe as much as I did. For the celery, I pulled off all the leaves – keeping them whole, and set them aside adding them to the dish before tossing. This also makes a fantastic crostini too. Serves 12 as a salad.
2 stalks celery + leaves
2 pts. cherry tomatoes, halved
10 vermouth-spiked pearl onions, halved top to bottom
1/2 c. Hormel mini pepperoni
1 c. garlic-stuffed olives, sliced into thirds
1/2 c. blue cheese, crumbled
2 slices bacon, fried crisp and chopped
2 tbsp. vodka
1 tbsp. Worcestershire sauce
2 tbsp. olive oil
1 tbsp. Horseradish mustard
1/4 c. V8 Spicy
zest and juice of one lemon
Whisk together ingredients and pour over salad, gently tossing – serve.
