Slow Cooker Crouton Stuffing

Cooking a holiday meal can be a massive undertaking, and I find my oven is usually screaming for mercy the day of.  This year I decided to try an idea I have had in my head for a while to see if I could utilize my Cuisinart 6.5 qt. slow cooker to make my stuffing.  I love stuffing, so there is never enough of this delicious goodness at any holiday table – in fact, I like to have more than one kind!  This recipe is made effortless using three Fresh Gourmet bags of croutons.  what is even more fantastic is they have so many amazing varieties that the possibilities are endless!

3 – 5 oz. bags Fresh Gourmet croutons
5 c. chicken or vegetable stock
2 tbsp. olive oil
3 stalks celery, sliced
1 onion, diced
1 tsp. garlic salt
1/2 tsp. pepper

Place stock, garlic salt and pepper into the slow cooker, set to high with cover on.

Next, in a fry pan over medium heat pour olive oil. When oil is shimmering, add celery and onion – saute for roughly 5 minutes. Pour contents into slow cooker. Open bags of croutons and pour into slow cooker, stir gently to combine. Replace cover and cook for one hour – serve.

NOTE: If you like your stuffing dry, remove one cup of stock OR if you like your stuffing more moist, add an additional cup of stock. Also, feel free to add craisins, nuts, mushrooms, sausage – whatever you like to have in your stuffing, personalize it to your tastes.
