Breakfast Sausage from Scratch

3 lbs. ground pork
3 garlic cloves, minced
2 tbsp. maple syrup
1 tbsp. dried sage
1 tsp. dried thyme
2 tsp. salt
3 tsp. pepper
1/4 tsp. cayenne pepper

>Pull your ground pork out 30 minutes before using to take chill off so it is easier to mix.  Combine all ingredients together in a large bowl, stirring with a silicone spatula to incorporate.  Using a 3″ round cookie cutter on parchment paper, scoop sausage mixture into cutter using medium pressure press down to fill cutter and create round.  Pull cutter up to remove and repeat until all are made.  I get eight out of this, you can shape them whatever size you prefer and whatever thickness you desire.

I bake these for 35 minutes in a 350 degree oven.
